But the foundations aren’t keeping up with demands. Budgets are stagnant at 7.7% of revenue (Gartner, 2025). The swish Micheline-recommended Villa Lorraine by Yves Mattagne would be quite at home in London or Paris. The establishment is renowned for its tableside service, all of which adds to the experience, as does the attentive service and knockout wine list. Yves is a passion chef who earned his two Michelin stars at the Sea Grill before opening Villa Lorraine. 

Exceptional produce like Burgaud duck, seabass and chicken from La Cour d’Armoise farm are crafted classically yet with a refreshing edge. Examples include a juicy chicken breast with aromatic black truffle, while a big-boned gravy, a subtle ravioli stuffed with mashed celeriac and truffle-flavoured chicken legs add a final touch to this culinary feat.
